Buying locker meats (a whole or half animal) tends to make the most sense financially if you eat “across the board,” consuming both high-end and economical cuts, and using stock bones. If you tend to eat mostly ground meats or a certain cut of meat, then it’s usually not cheaper to buy locker meat: It may be better to buy ground meats, sausages, or other products in bulk.
